Immunological aspects of food allergy

چکیده
Food allergy is a clinical manifestation of an immunological process in which specific antibodies or sensitized T-lymphocytes interact with food constituents. The reaction may occur after ingestion of the particular food, after inhalation or by epicutaneous contact. A distinction must be made between food allergy, which is an immunological process, and other disorders provoked by foods. Adverse reactions to foods and their ingredients may be divided into the following categories: Hypo-intoxications and intoxications from food additives (tartrazine, benzoates), natural components (oxalate, goitrogens, cholinesterase inhibitors) and micro-organisms (bacterial toxins, mycotoxins). Intolerance phenomena or idiosyncrasies, or both, due to inborn errors: examples are lactose intolerance, gluten-induced enteropathies, hyperlipoproteinaemia, disorders of amino acid metabolism and hereditary haemolytic anaemia. The latter may occur in persons with glucose-6phosphate dehydrogenase deficiency after the consumption of currants, gooseberries or the beans of Vicia faba. Allergic reactions mediated either by immunoglobulins (IgE, IgM, IgG) or sensitized T-lymphocytes.

Histamine and Food Allergy
Histamine is synthesized via histidine decarboxylase (HDC) in wide types of immune cells and is involved in abundant physiologic and pathologic processes. Histamine is a mediator released during inflammatory reactions, such as food allergy. Food allergy is immunological reactions to 'fight off' specific allergens within food in susceptible individuals. The aim of this study is investigation of ...

متن کاملCross-reactivity syndromes in food allergy.
The immunological phenomenon of cross-reactivity has consequences for the diagnosis and treatment of certain food allergies. Once allergy to a particular food has been confirmed, positive test results are often obtained against other foods and, although less frequently, true clinical cross-reactivity is determined. This article reviews the relevant clinical aspects of food allergies in which th...
